White Truffle Risotto with Parmesan Dust

A creamy and luxurious risotto infused with the earthy aroma of white truffles and topped with parmesan dust.

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup grated parmesan cheese
  • 1 tbsp white truffle oil
  • Salt and pepper to taste

Instructions

  1. Heat the broth in a saucepan and keep it warm.
  2. In a large pan, sauté the onion in butter and olive oil until translucent.
  3. Add the Arborio rice and stir for 1-2 minutes.
  4. Pour in the white wine and stir until absorbed.
  5. Add the warm broth one ladle at a time, stirring until absorbed before adding more.
  6. Continue until the rice is creamy and tender.
  7. Stir in the parmesan cheese and white truffle oil.
  8. Season with salt and pepper.
  9. Serve hot with a dusting of parmesan cheese.
