Ingredients

  • 1 sheet puff pastry, thawed
  • 2 cups wild mushrooms, chopped
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 4 oz goat cheese
  • 1 egg, beaten
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry and cut into small circles to fit tartlet molds.
  3. Press pastry into molds and prick bottoms with a fork.
  4. Sauté onion, garlic, and mushrooms in olive oil until tender. Season with thyme, salt, and pepper.
  5. Spoon mushroom mixture into pastry shells.
  6. Crumble goat cheese on top.
  7. Brush edges with beaten egg.
  8. Bake for 15-20 minutes until golden brown.
  9. Let cool slightly before serving.
