Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup wild mushrooms, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • Olive oil for frying

Instructions

  1. In a saucepan, heat the vegetable broth and keep it warm.
  2. In a separate pan, sauté the onion and garlic in olive oil until translucent.
  3. Add the wild mushrooms and cook until softened.
  4. Stir in the Arborio rice and cook for 1-2 minutes.
  5. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until absorbed.
  6. Once the rice is creamy and al dente, stir in the Parmesan cheese and parsley. Season with salt and pepper.
  7. Let the risotto cool, then form into small balls and roll in breadcrumbs.
  8. Heat olive oil in a frying pan and fry the risotto bites until golden brown on all sides.
  9. Drain on paper towels and serve warm.
