Winter Veggie and Goat Cheese Galette

A rustic and savory galette filled with winter vegetables and creamy goat cheese.

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 cup butternut squash, diced
  • 1 cup Brussels sprouts, halved
  • 1 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 oz goat cheese, crumbled
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs.
  3. Add ice water gradually, mixing until the dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  4. Toss squash, Brussels sprouts, and onion with olive oil, thyme, salt, and pepper. Roast for 20 minutes.
  5. Roll the dough into a 12-inch circle on a floured surface. Transfer to a baking sheet.
  6. Spread roasted vegetables over the dough, leaving a 2-inch border. Sprinkle goat cheese on top.
  7. Fold the edges of the dough over the filling, pleating as needed. Brush dough with egg wash.
  8. Bake for 30-35 minutes until golden brown. Cool slightly before serving.

Notes

  • Use cold butter for the flakiest crust.
  • You can substitute other winter vegetables like carrots or parsnips.
  • Serve warm for the best flavor.
