Yuzu lemon bars are a delightful dessert that combines the unique flavor of yuzu citrus with a classic lemon bar recipe, creating a zesty and refreshing treat.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup yuzu juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar, then cut in the butter until crumbly.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake for 15 minutes or until lightly golden.
  5. In another bowl, whisk together eggs, granulated sugar, yuzu juice, lemon zest, baking powder, and salt.
  6. Pour the filling over the baked crust.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool before cutting into squares and dusting with powdered sugar.

Notes

  • Yuzu can be substituted with lemon juice if unavailable.
  • Store in the refrigerator for up to a week.
  • For a more intense flavor, add more yuzu zest.
