Za’atar Veggie Bowl

A fresh and flavorful Za’atar Veggie Bowl packed with nutritious ingredients and topped with a zesty za’atar dressing.

Ingredients

  • 1 cup quinoa, cooked
  • 1 cup chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 2 tbsp za’atar spice
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let cool.
  2. Toss chickpeas with 1 tbsp olive oil and 1 tbsp za’atar spice, then roast at 400°F for 15 minutes.
  3. Chop all vegetables and arrange them in a bowl with quinoa.
  4. Whisk together remaining olive oil, za’atar, lemon juice, salt, and pepper for the dressing.
  5. Drizzle dressing over the bowl and serve.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • Substitute quinoa with brown rice or couscous if preferred.
  • Add feta cheese for extra flavor.
