Zoodle Pesto Salad

A fresh and healthy salad made with zucchini noodles and pesto. Quick to prepare and packed with flavor.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp pine nuts
  • 1 garlic clove
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved

Instructions

  1. Spiralize the zucchinis and set aside.
  2. In a food processor, blend basil, Parmesan, pine nuts, garlic, olive oil, and lemon juice until smooth.
  3. Toss the zucchini noodles with the pesto sauce.
  4. Add cherry tomatoes and mix well.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill for 30 minutes.
