Zucchini Lasagna Rolls

Delicious zucchini lasagna rolls filled with cheese and herbs.

Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  1. Slice zucchinis lengthwise into thin strips.
  2. Mix ricotta, mozzarella, Parmesan, egg, basil, oregano, garlic powder, salt, and pepper.
  3. Spread cheese mixture on each zucchini strip and roll up.
  4. Place rolls seam-side down in a baking dish.
  5. Pour marinara sauce over rolls.
  6. Bake at 375°F for 25 minutes.

Notes

  • Use a mandoline for even zucchini slices.
  • Pat zucchini dry before rolling.
  • Add spinach or mushrooms for extra flavor.
