25-Minute Zucchini Noodle Primavera

A light and fresh dish featuring zucchini noodles tossed with seasonal vegetables and a light sauce.

Ingredients

  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, thinly sliced
  • 1/2 cup sliced mushrooms
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add bell pepper and mushrooms, cooking for 3-4 minutes until softened.
  4. Stir in cherry tomatoes and cook for another 2 minutes.
  5. Add zucchini noodles and toss gently for 2-3 minutes until just tender.
  6. Remove from heat and stir in lemon juice, Parmesan cheese, salt, and pepper.
  7. Garnish with fresh basil before serving.

Notes

  • Use a spiralizer to create zucchini noodles.
  • Do not overcook the zucchini noodles to maintain texture.
  • Add grilled chicken or shrimp for extra protein.
