  • 1 lb boneless chicken breast, cubed
  • 1 medium onion, diced

  • 2 stalks celery, chopped
  • 2 medium carrots, sliced
  • 6 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Stir in onion, garlic, celery, and carrots. Cook for 3 minutes.
  4. Pour in chicken broth and add salt, pepper, thyme, and bay leaf.
