Sweet Potato Casserole with Pecan Topping

  • 4 cups mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix mashed sweet potatoes, granulated sugar, eggs, milk, 1/4 cup melted butter, vanilla, and salt in a bowl.
  3. Spread mixture evenly in a greased baking dish.
  4. Combine pecans, brown sugar, flour, and 2 tbsp melted butter to make topping.
  5. Sprinkle topping over sweet potato mixture.
  6. Bake for 30 minutes or until golden brown.
